Wild Rice Turkey Soup

Wild Rice Turkey Soup
* splash vegetable oil
* 1 onion, chopped
* 2 ribs celery, chopped
* 2 carrots, chopped
* 1 cup diced turkey (smoked or roasted)
* 1/2 cup uncooked wild rice
* 1 tsp dried tarragon
* 1/4 tsp pepper
* 4 cups chicken broth
* 1 1/2 cups evaporated milk
* 1/3 cup flour
* 1 cup frozen peas
1. heat oil in skillet, saute onion.
2. place onion, celery, carrots, turkey, wild rice, spices in dutch oven or slow cooker.
3. add broth.
4. cover and cook on low, 6-8 hours.
5. mix flour and evaporated milk, stir into soup.
6. cook a further 20 minutes.
7. add frozen peas, cook a further 15 minutes.
8. serves 6.
