Weeknight Salmon Balls

Easy, healthy, tasty favorite for the family.


2 tins salmon (remove skin and large bones)
1/2 cup Uncle Ben's long grain rice
1 carrot, finely grated
3 green onions, finely chopped (can use chives)
1 egg
salt, pepper, paprika to taste
1 can cream of mushroom soup
1/2 cup water

1. Combine salmon, rice, carrot, green onion, egg, salt, pepper, paprika.
2. Shape into 16 balls.
3. Place in 9-inch square glass casserole dish
4. Combine soup and water, pour gently over salmon balls.
5. Bake 350-degrees for 1 hour
6. Serves 4-6.
