Warm Acorn Squash & Apple Salad

This is so cozy and warm on a blustery fall day.

Salad Dressing:
2 tbsp apple cider vinegar (with the mother is best)
2 tbsp apple juice
1 tbsp liquid honey
1 tbsp dijon mustard
pinch salt and pepper
2 tbsp olive or grape-seed oil
Combine in a jar, shake well, set aside till ready to dress salad.

Salad Ingredients:
1 acorn squash
2 apples (unpeeled is best, use organic)
1/2 cup finely chopped sweet red onion or scallions
washed, organic lettuce leaves
1/2 cup chopped pecans

(1) Cut squash into 6-8 pieces, remove seeds. Steam 5-10 minutes till tender. Drain and remove skin. Cut into cubes.
(2) Cut apples into cubes, finely dice onion. Add both to squash.
(3) Toss with dressing.
(4) Arrange onto torn lettuce leaves.
(5) Just before serving, sprinkle pecans on top.
