Tzatziki (Greek Dip)

Delicious with pita bread, and roasted chicken.

1 large cucumber
3/4 cup plain yougurt
3/4 cup sour cream
3 tbsp extra virgin olive oil
4 tsp minced dill (fresh)
4 tsp red wine vinegar
3 cloves garlic, minced (fresh)
1/4 tsp sea salt

1. Peel cucmber, cut in half, remove seeds.
2. Grate cucumber, remove extra liquid by squeezing with paper towels.
3. In bowl, combine cucumber and all other ingredients.
4. Chill. Serve with pita bread and roasted meat.
5. If desired, garnish with olives and fresh dill.
