Teriyaki Pork Stir Fry

This is a 'go to' recipe for our family. It's quick and delicious. I add whatever vegetables we have on hand. Serves 4-6.
4 boneless pork loin chops (approx 1 pound)
2 tbsp olive oil
1 onion, sliced thinly
1 red bell pepper, sliced thinly
1 green bell pepper, sliced thinly
1 head broccoli, cut into bite-sized florets
1/4 cup chicken or veg stock, or water
1/4 cup teriyaki sauce
1 tbsp vinegar (white wine, rice, or apple cider)
1 tsp cornstarch
1 tsp water
1 tsp toasted sesame seeds or chopped nuts (optional)
1. cut pork into thin strips
2. in skillet or wok, heat oil, stir fry pork.
3. set aside pork into a bowl.
4. in same skillet/wok, now stir fry onion, peppers, broccoli for approx 3 minutes.
5. return pork strips to the pan with any liquid in bowl.
6. add teriyaki sauce and vinegar, stir.
7. combine cornstarch and water well in small bowl, add to pan, stirring as you add. sauce will change to a thicker, more glossy appearance.
8. stir well to coat meat and vegetables with sauce.
9. transfer to serving platter.
10. sprinkle with toasted sesame seeds or nuts just before serving.
Variations:
You can add/delete to the combination of vegetables. We sometimes use:
* bean sprouts
* celery
* grated cabbage
* green beans
* green onion
* sugar peas
* cauliflower
* carrots
* zucchini
