Sweet & Spicy Ribs

5 lb country style ribs (the meaty ones)
1 jar plum jam or jelly (12 oz)
1 jar chili sauce (12 oz)
1/4 c soy sauce
1/4 tsp hot sauce (optional)
1. place ribs in 2 open glass casseroles, single layer
2. cook ribs 30 minutes at 400f to brown and melt fat.
3. drain and discard fat.
4. meanwhile, prepare sauce: combine ingredients in small pot and heat to melt jam and combine.
5. set aside about a cup of sauce for serving.
6. brush ribs with sauce and continue baking a further 45 minutes. baste several times.
7. serve with extra sauce.
8. excellent summer eating with green and potato salads.
