Strawberry Sorbet

This is wheat and dairy free and vegetarian.

* 2 pints fresh berries
* 2/3 cup organic sugar
* 1 cup fresh squeezed orange juice
* 1/4 cup fresh squeezed lemon juice
* 1/4 cup Grand Marnier or other orange liqueur (optional)

1. Wash and core berries and lay on paper towels to absorb excess moisture.
2. In large bowl, mash berries. Add 1/3 cup sugar and stir.
3. Allow berry/sugar mash to rest for a half hour or more.

4. In saucepan, heat juices and add sugar. Stir until sugar dissolves. Remove from heat and let cool.

5. Back to to berries - puree them in a blender or food processor.
6. Then combine berries and juice-syrup. Stir in the liqueur if using.
7. Place in shallow pan and place that in the freezer.
8. When partially frozen, remove from freezer and whisk, then return to freezer.
9. When partially frozen again, whisk again.
10. When partially frozen again, whisk a third time.
11. When frozen, stir and serve.
