Rutabaga & Onion Side Dish

This is a tasty side dish that's great with any roast meat, or everyday family favourites like meatloaf, baked chicken, or chops.

* 1-2 Rutabaga (depending on how many you're serving)
* salted water for boiling

* approx 2 tbsp butter
* approx 1/2 cup apple sauce
* approx 1 tbsp brown sugar

* 1-2 onions, sliced
* approx 2 tbsp butter

(1) Peel and chop rutabaga. Boil in salted water till soft and easily mashable.
(2) Let steam escape, and then mash. Mash in a couple tbsp butter. Mash in apple sauce and brown sugar. Set aside.
(3) Saute onion slices slowly in butter in fry pan.
(4) When onions are well sauted (soft and slightly golden) then stir into rutabaga mash.
(5) Serve immediately.

Rutabagas cooked like this are a sweet comfort food that are economical, low in calories, and high in nutrition.
