Red Lentil Dip

I enjoy serving this as it's rich in fiber and protein. And it's tasty.

Red Lentil Dip

1 cup red lentils
1 head garlic
3 tbsp fresh lemon juice
3/4 tsp salt
1/4 cup extra virgin olive oil
1 tsp paprika
1/4 tsp cayenne (optional, for heat)
1/2 tsp ground cumin

* Rinse lentils well. Change the water several times.
* Separate garlic into cloves, peel.
* Bring lentils, garlic, 3 cups water to a boil, boil 10 minutes.
* Reduce heat, stir occasionally, simmer 15 minutes. Continue cooking till lentils and garlic are soft.
* Increase heat and cook off some of the moisture until no longer watery.
* Using an immersion blender (like a braun stick) blend in pot until smooth. Cool. Stir in lemon and salt.
* In small skillet, heat half the oil, and saute (on low) the paprika and cumin till fragrant (2 minutes). Do not overcook or paprika will become bitter.
* Scrape oil and spices into lentil mixture, combine well.
* Whisk in remaining oil. Serve with crackers and vegetables.
