Quinoa Casserole

Quinoa (keen-wah) is very high in protein.

1 cup quinoa
1 tbsp olive or grapeseed oil
1 small onion, diced
1 clove garlic, minced
1 cup diced butternut squash or carrot
1 cup apple or orange juice
1 cup chicken stock
1/2 tsp salt
1/4 cup fresh parsley, chopped

1) Rinse quinoa and drain well. Repeat.
2) In large skillet, cook quinoa until moisture evaporates. Then keep cooking (on medium) until toasted.
3) Put quinoa in oven-proof casserole (8 cup size)
4) In same skillet, heat oil, add onions and cook till softened.
5) Add garlic and squash or carrots and cook 2 more minutes. Add onion/garlic/veg to quinoa in casserole.
6) Add juice, stock, salt, and stir to combine all.
7) Cover and bake at 350-degrees for 30 minutes
8) Remove cover, and bake 10 more minutes
9) Stir in parsley. Fluff with a fork.
