Quick Steak Diane

This Steak Diane recipe is great because it's tasty and quick, and therefore "stress-free" family cooking. Waay better than take-out, and still brings everyone together. I hope you have some wonderful family meals with this time-saver.

Ingredients:
4-6 beef rib eye steaks (one per person)
salt, pepper, paprika
2 tablespoons butter
2 tablespoons green onions, chopped
1/2 tsp ground mustard powder

Sauce/glaze:
2 tablespoons butter
1 tablespoon fresh lemon juice
1 tsp Worcestershire sauce
1 tablespoon fresh parsley, chopped
1 tablespoon fresh chives, chopped (or scallions)

First, melt 2 tbsp butter (NOT margarine) in skillet. Stir in 2 tbsp chopped green onion and 1/2 tsp ground mustard powder, and cook together for about a minutes. Season steaks both sides with salt, pepper, and paprika. Add steaks to the skillet, and pan-fry 2-3 minutes each side, until done to your family's preference. Remove steaks and keep warm on serving dish (I place a sheet of foil over steaks). Now make a quick sauce in the same skillet. Add the 2 tbsp butter, the 1 tbsp lemon juice, and the 1 tsp Worcestershire sauce. Cook, stirring, for 2 minutes. Add the fresh herbs, and pour over steaks. Serve.
