Pumpkin Marmalade


This is delicious served in a similar fashion to chutney. It's great with cheese platters, roasts, crusty breads, just use your imagination and your family's preferences.

Ingredients

1 can pumpkin puree
1 cup marmalade
1 tsp grated fresh ginger
2 tbsp fresh lemon juice

Combine pumpkin, marmalade, and ginger in a saucepan, and simmer 5 minutes to combine flavours. Remove from heat and allow to cool.

When cooled, stir in fresh lemon juice, and refrigerate until serving. Keeps well for 5-7 days.
