Porcupine Meat Balls

by Aubrey
(Vernon, BC)

Kids love this. The name comes from the spiky look to the cooked meatballs.

1 pkg lean or extra lean ground beef (or turkey)
1 small onion, finely chopped
celery salt, pepper, paprika (few shakes each)
1/4 cup Uncle Ben's long grain rice
1 can tomato soup
1 can water

1. Combine meat, onion, rice, seasonings. Mix well.
2. Shape into meatballs, place in shallow baking dish.
3. Combine soup and water, pour gently over meatballs.
4. Bake 350 oven for 1 hour.
