Party Brie

1 sheet frozen puff pastry (thaw it)
1/3 cup apricot jam or jelly
1 round Brie
1 egg, beaten
1 tbsp water

Roll pastry to a 14" by 14" square. Spread apricot jam or jelly into a smaller square (about 5 inches or so) in the middle of the pastry square. Centre Brie on top of jam. Fold the pastry to enclose the cheese, pinching to seal. Remove excess pastry so you have a tidy pastry package. Place on cookie sheet for baking.

Heat oven to 400 F. Combine egg and water, and wash over entire pastry. If you're artistic, you can use any extra pastry to cut out decorative pieces for the top of the Brie. Bake 20-25 minutes.

Serve warm with sturdy crackers (like Triscuit), and apple wedges. Serve alongside red and green grapes.
