New England Pot Roast

Family comfort food. And little stress as the pot does the cooking.

1 pot roast (eg, cross rib or blade)
2 tbsp vegetable oil
8 small potatoes, halved
8 carrots, quartered
8 small onions, whole
1 jar (8 oz) prepared horseradish
1 tsp salt
1 tsp pepper
1 cup water

1. brown roast on all sides in hot oil.
2. place raw vegetables in bottom of slow cooker.
3. place browned roast on top of vegetables.
4. combine horseradish, salt/pepper, water. pour over beef.
5. cover, cook on low for 8-10 hours.
6. remove roast, let rest 10-15 minutes.
7. remove vegetables to serving platter.
8. thicken cooking liquid for gravy (in sauce pan on stove).
9. serves 8.
