Mini Mexican Meat Loaves

Mini Mexican Meatloaves
1 tbsp veg oil
1 onion, chopped
2-3 cloves garlic, chopped
1 tsp dried oregano
1 tsp ground cumin
1/2 tsp ground allspice
1/2 tsp salt
1/2 tsp pepper
2/3 cup ketchup
2 tbsp canned chipotle peppers in adobe sauce, chopped
3 eggs
1/2 fresh bread crumbs
1/2 cup green onion, chopped
1/2 cup balkan-style plain yogurt
2 pounds lean ground beef
Saute onion in oil in open skillet. When soft, add in garlic and all spices and cook 1 minute. Cool.
In small bowl, combine ketchup and chipotle peppers.
In large bowl, whisk eggs, mix in bread crumbs, green onion, yogurt, raw beef, and cooked onion mixture. Set aside 1/4 cup ketchup mixture, and add remaining ketchup mixture to bowl with egg mixture.
Shape into 3-4 loaves. Cook on parchment-lined baking sheet at 375-degrees for 30-35 minutes. Serve with reserved sauce.
My husband and teen aged son enjoy this as leftovers the following day with blue cheese dressing on a salad.
