Mexican Cinnamon Rice

Cinnamon is a great super-spice with many health benefits, including helping to regulate blood sugar.

1 medium onion, chopped
1-2 cloves garlic, minced
1 tbsp butter
1 cup uncooked long grain rice
1/2 cup raisins or currants
2 cups vegetable or chicken broth
2 tsp ground cinnamon
1 tbsp chopped fresh cilantro

* Saute onion and garlic in melted butter
* Set aside cilantro for just before serving
* Add all other ingredients to sauce pan
* Bring to boil, cover, and simmer for 18 minutes
* Without removing lid, remove from heat and let rest 10 minutes
* Fluff with fork. Garnish with cilantro. Serve.
