Mashed Yam Potatoes

by Keen Family
(North Vancouver, BC)

This is the healthiest and most delicious mashed potatoes our family has discovered. This recipe has more nutrition, more fiber, and less fat that traditional mashed potatoes.

This is the ratio:
50% to 66% potatoes
50% to 33% yams

Peel the potatoes and yams, and cut into evenly sized pieces. Boil in salted water until done. Drain well, and return the pot to the stove and allow some of the steam to evaporate. Mash together. Add butter to taste. Do not add milk, as the cooked yams contribute enough moisture. (And to make this dairy-free, skip the butter.)

Want an extra nutrition boost? Add some pieces of cauliflower to the pot and mash that right in with the potatoes and yams. Extra flavour and nutrition.

Really good, even for picky eaters
by: Merilee

I wasn't sure that my 4 and 5 year old daughters would try this, as they are both picky eaters. However, they both really enjoyed these. I think the colorfulness and the natural sweetness won them over.

Surprisingly good
by: Hilary (Calgary)

I wanted to try this recipe to see if I could "healthify" mashed potatoes, and didn't know if my children would turn their noses up at the new version. Delightedly, everyone really enjoyed the extra flavour and colour. Thanks for sharing. I'll be trying some of your other recipes soon.

Great with garlic too
by: Nancy

Our family also makes these delicious yam-potatoes, and the kids won't eat the bland white mashed ones any more. We often add cauliflower chunks to the pot and mash in. We also add a large spoonful of minced garlic to the cooking water for extra taste and goodness.
