Mashed Yam Potatoes

This is the healthiest and most delicious mashed potatoes our family has discovered. This recipe has more nutrition, more fiber, and less fat that traditional mashed potatoes.

Easy!

This is the ratio:
50% to 66% potatoes
50% to 33% yams

Peel the potatoes and yams, and cut into evenly sized pieces. Boil in salted water until done. Drain well, and return the pot to the stove and allow some of the steam to evaporate. Mash together. Add butter to taste. Do not add milk, as the cooked yams contribute enough moisture. (And to make this dairy-free, skip the butter.)

Want an extra nutrition boost? Add some pieces of cauliflower to the pot and mash that right in with the potatoes and yams. Extra flavour and nutrition.
