Lemon Roast Potatoes
8-10 potatoes, peeled
1 cup water
1/2 cup fresh lemon juice
1/3 cup extra virgin olive oil
3 cloves garlic, minced
2 tsp salt
2 tsp dried oregano
1 tsp pepper
Cut potatoes lengthwise into long wedges. Place in 13-9 casserole dish. Whisk together remaining ingredients, pour over potatoes, coat evenly. Bake 325-degree oven for 2 hours, or until tender and marinade evaporated. Turn potatoes about every 40 minutes.
