1 cup water 1 cup chicken broth 2 tbsp fresh squeezed lemon juice (no seeds) 1 tbsp butter (not margarine) 1 cup long grain rice 1/4 tsp finely grated lemon peel 1/4 tsp lemon pepper 1/4 tsp parsley 1/4 tsp dried basil or dried dill
1. bring water, chicken broth, lemon juice and butter to boil in pot large enough to cook rice in. 2. Stir in rice, seasonings, and lemon peel. 3. Cover. Reduce heat, simmer 20 minutes. 4. Remove from heat, and let rest for 5 minutes with lid on.
