Lemon Rice Pilaf

1 medium onion, chopped
1-2 cloves garlic, minced
2 tsp butter
1 cup uncooked long grain rice
1 cup sliced celery
2 cups vegetable or chicken stock
2 tsp organic grated lemon zest
1/2 tsp mustard powder
1 tbsp fresh parsley
(1) Saute onion and garlic in butter.
(2) Reserve parsley for garnish.
(3) Add remaining ingredients to sauce pan.
(4) Bring to boil, cover, simmer 18 minutes.
(5) Without removing lid, remove from heat and let rest 10 minutes.
(6) Fluff with fork, stir in fresh parsley, serve.
