Lemon Peach Curry Chicken

Ingredients
2 tsp curry powder
salt & pepper
4 skinless, boneless chicken breast halves **
cooking oil, such as olive or grapeseed
1/3 c peach (or apricot) preserve or jam
2 tbsp fresh squeezed lemon juice
2 tbsp water
2 tsp grated lemon rind

** if your family prefers, the chicken breast can be cut into smaller pieces, almost like a stir fry. Both ways are good.

1. Cut chicken into pieces if desired.
2. Combine curry powder with few shakes salt and pepper.
3. Rub seasoned curry powder onto chicken pieces. Set aside for approx 20 minutes.
4. Heat oil in open skillet. Cook chicken, about 6-7 minutes per side, then set aside and cover to keep warm.
5. Make sauce in pan by adding preserves (or jam), fresh squeezed lemon juice, and water. Cook, stirring well, for 1-2 minutes.
6. Spoon sauce over chicken and/or toss chicken in sauce.
7. Garnish with grated lemon zest.

Serve with basmati rice, or quinoa, or roasted vegetables.
