Leek Potato Green Bean Soup

makes 12 cups

6 medium leeks
1 clove garlic, minced
8 medium potatoes, peeled and cubed
8 cups chicken stock
1 cup milk
1 tsp salt
1/2 tsp white pepper
3 carrots, peeled and cubed
1 cup frozen green beans
fresh parsley
sour cream for garnish (optional)

1. trim leeks to 2 inches of green. cut lengthwise and wash well in cold water. slice thinly.

2. in pot large enough for soup add leeks, garlic, potatoes, carrots, green beans, salt, pepper, and chicken stock. simmer covered for 30 minutes. vegetables should be done.

3. in smaller amounts, puree in blender or food processor. return to pot, add milk and sprinkle with parsley.
