Lamb Kebabs with Peanut Sauce
These are fun to eat off the stick. Makes 8.
Lamb Kebabs with Peanut Sauce
1.5 pounds lean ground lamb
3 tbsp chopped fresh parsley
1 tsp dried oregano
2 tsp ground cumin
2 tbsp tomato paste
2 onions, finely chopped
1 cup dry bread crumbs
2 eggs
8 wooden skewers, soaked in water, then lightly oiled
#1 Preheat BBQ to medium.
#2 Combine all ingredients, mix well.
#3 Shape meat into 8 long sausage shapes.
#4 Thread each "sausage" onto lightly oiled, pre-soaked skewers.
#5 Cook on medium BBQ, turning often, about 15 minutes.
Peanut Sauce
1 tbsp peanut oil
2 cloves garlic, crushed
1 onion, finely chopped
4 tbsp crunchy natural peanut butter
1 tbsp tomato paste
2 tbsp fruit chutney
2 tbsp sweet sherry
1 tbsp fresh lemon juice
1/3 cup coconut milk
2 tsp ground coriander
1 tsp chili paste
#1 Heat oil in fry pan.
#2 Saute onion and garlic for approx 1 minute
#3 Stir in remaining ingredients.
#4 Cook over low heat for approx 10 minutes, stirring till thickens
