Lamb Cutlets with Honey Mint Butter

Serves 4.


Lamb Cutlets with Honey Mint Butter

Ingredients
1 tbsp veg oil
1 clove garlic, crushed
8 lamb cutlets
1/2 cup butter, soft
2 tbsp fresh mint, chopped
1 tbsp honey
pepper

#1 Make honey mint butter ahead of time.
#2 In small bowl combine soft butter, honey, chopped mint, ground pepper (to taste). Mix well.
#3 Place butter on sheet of plastic wrap, shape into a log, and chill till firm.

BBQ
#1 Combine veg oil and garlic.
#2 Preheat BBQ to medium.
#3 Wrap bone ends of cutlets in foil to prevent burning.
#4 Brush lamb cutlets with garlic oil.
#5 Grill 3-4 minutes per side till cooked and tender.
#6 Slice chilled honey mint butter into 8 slices.
#7 Place 1 slice of butter atop each cutlet.
