James Barber's Fish Cakes
Another great way to use up leftovers for a casual lunch.
cold leftover mashed potatoes
equal amount of cold, leftover fish (or use canned tuna)
1 medium onion, finely chopped
1 egg
handful of fresh, chopped parsley
salt and pepper
breadcrumbs or flour
butter for frying
1. Mix all ingredients vigorously.
2. Roll into egg-sized balls, flatten into fish cakes.
3. Pat fish cakes into flour or breadcrumbs.
4. Fry fish cakes in butter until crispy on both sides.
Serve fish cakes with tarter or seafood sauce alongside salad.
