James Barber's Bubble & Squeak

The ultimate leftover dish. Depends on what you have on hand to add in.

leftover mashed potatoes
1 onion, finely chopped
cooked cabbage and/or cauliflower (leftovers is ideal)
1 egg, beaten
butter
salt and pepper

1. Mix all ingredients together.
2. Melt butter in open skillet.
3. Add mashed potato mixture, either as one large patty, or several smaller ones.
4. Fry until crisp crust forms on bottom.
5. Flip, continue frying until crust on both sides.
6. Serve with eggs, bacon, sauted mushrooms.

Be creative with your leftover vegetables. Bubble & Squeak is the perfect way to use up any cooked broccoli, brussel sprouts, green onion, peas, carrots, parsnips, etc.
