Italian Mussel Soup


Easy and Yummy.

3 pounds mussels
2 tbsp butter
2 tbsp vegetable oil (like grapeseed)
1 onion, chopped
2-3 cloves garlic, minced
1 cup stock or white wine
1 large can tomatoes (28 ounces)
1 tbsp fresh squeezed lemon juice
1 tsp dried basil

1. Clean mussels by scrubbing and removing beards. Throw out any that will not close tight.
2. In large cooking pot, melt butter and combine with oil. Saute onion and garlic for 3-4 minutes.
3. Add the rest of the ingredients EXCEPT mussels. Simmer 5-6 minutes.
4. Add mussels, cover, cook 6-7 minutes (until mussels have opened). Throw out any mussels that do not open.
5. Serve with lots of sourdough bread. Feeds 6-8.
