How to make vegetable stock in a crock pot


This makes enough stock for 2 batches of soup.

In a 6 quart slow cooker (or larger) put:
8 carrots, scrubbed, chopped coarsely
6 stalks celery, chopped coarsely
3 onions, chopped coarsely
3 cloves garlic, chopped
6 sprigs parsley
3 bay leaves
10 black peppercorns
1 tsp dried thyme
salt (optional)
12 cups water

Combine everything into slow cooker. Cover and cook on low for 8 hours, or overnight. May cook on high for 4 hours. Strain and discard solids. Keep in fridge for up to 5 days, or freeze.
