Honey Picnic Cake

This honey picnic cake recipe comes from Newfoundland.

1/3 cup unsalted butter
1/2 cup golden sugar
1/2 cup honey (wildflower is best)
1 tbsp water

Place butter, sugar, honey and water in saucepan on low heat. Allow butter to melt, and sugar to dissolve (about 5 minutes). Remove from heat and cool.

Preheat oven to 350F. Butter and flour an 8 inch pan (round or square).

1 1/2 cup flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
2 eggs

Combine dry ingredients in bowl, combine with fork.

Whisk eggs. Add eggs to cooled butter/honey mixture. Then stir all liquid into flour mixture. It will be somewhat lumpy. Transfer batter to prepared cake pan. Bake 30 minutes.

Vanilla Icing

1/4 cup unsalted butter, soft
1 1/2 cups icing sugar
2 tbsp milk
1 tsp vanilla

Cream butter and icing sugar. Add milk and vanilla and beat till smooth. Ice cake when completely cooled.
