Homemade Tomato Soup

Have you tried canning your own tomatoes in glass mason jars? Terrific, and congratulations. Here's a simple recipe to turn those homemade canned tomatoes into simple (and wheat-free dairy-free) tomato soup. Kids love the simple tasty flavour.
Ingredients for simple homemade tomato soup
* 1 tbsp olive oil
* 2 onions, chopped
* 2-3 cloves fresh garlic, minced
* 1/4 tsp dried basil (optional)
Combine above ingredients into a stainless steel pot large enough for soup (NEVER use aluminum). Saute onion, garlic and basil till soft, approx 5-8 minutes.
* 28 fluid ounces of stewed/chopped tomato preserve
* 3 cups vegetable stock (or can use chicken stock)
* salt and pepper to taste
Add tomatoes, stock, and salt and pepper to taste. Bring to boil and then reduce to simmer for approx 15 minutes. Remove from heat, and using an immersion blender (like a Braun stick) blend till smooth.
Serve. This is great in a thermos for school or work, as a starter before dinner, and a great lunch.
