Hearty Cholent with Dumplings

This Cholent is made with potatoes, beans, and barley. You may add beef as well - like a stew - if you wish. This dish cooks for a long time in a crock pot, as in overnight is ideal.

Cholent:
5 potatoes, peeled
1 onion
3 tbsp barley, washed
1 tin kidney beans, rinsed well
salt and pepper to taste

1. Peel potatoes. Place whole or halved in bottom layer of crock pot.
2. Add well-rinsed kidney beans.
3. Add well-rinsed barley
4. Season with salt and pepper.
5. Nestle whole onion (peeled and top/bottom removed) in the center of the crock pot on top of the potatoes.
6. Add enough water to just cover everything.

Dumplings:

1/2 cup flour
1 onion, minced
1 egg
1/4 cup water
1 tsp sugar
salt and pepper

7. Combine flour, egg, water until smooth.
8. Add onion, sugar, salt and pepper. Mix well.
9. Dumplings should not be runny, nor be a thick paste.
10. Set crock pot with cholent to high, until water is simmering.
11. Gently pour dumpling mixture on top of cholent.
12. Cover, and adjust heat to low setting. Let cook for 12-24 hours (as in overnight).
13. Check the water level from time to time, and add water to prevent drying out.
