Greek Spinach Rice Pilaf

2 bunches spinach
2 tbsp olive oil
1 large onion, finely chopped
1 cup converted rice (like Uncle Ben's)
1 1/2 cup water
1 tbsp chopped fresh dill (or 1/2 tsp dried)
salt and pepper
lemon

Wash spinach very well. Drain well. Slice large leaves into smaller slices. Set aside.

Saute onion in skillet in oil. Add uncooked rice, and cook 2-3 minutes. Add water, dill, salt and pepper. Bring to boil. Add spinach, stir, cover, and reduce heat to low for 30 minutes. Liquid will be absorbed completely. Fluff with fork before serving. Serve with lemon (or squeeze fresh lemon on top before serving).
