Grandma’s Orange Soup (better known as dumpling soup)

My Grandma used to make this delicious soup. Because she lived in Saskatchewan, she had access to fresh vegetables and dairy.

The paprika makes it orange. The recipe didn't come with quantities, but there is a wide margin for error, and it can be adjusted to your liking.

You will need:
potatoes
chopped onion
butter
salt
flour
milk
egg
paprika

Cube potatoes and boil in salt water.

In a frying pan, fry onions in butter. Once cooked, add flour to make a paste, and then add milk or cream milk.

Stir until smooth. Add this mixture to potato mixture.

Stir until mixed. In another bowl, make dumplings, which consist of flour, egg, salt and water.

When the dough is thick, drop by small spoonful into boiling mixture till dumplings are done.

Add about 30ml paprika, or until the soup is orange. Add more salt if needed.


Substitution ideas:
Cauliflower chunks for potato
whole wheat flour for white flour
