GF Zucchini Pancakes

This great recipe is from Angie at the Gluten Free Club www.glutenfreeclub.com.

Ingredients:
2 medium zucchini (about 2 cups grated)
2 tbsp grated red onion
2 large eggs, lightly beaten
6 to 8 Tbsp gluten free flour mix
1 tbsp gluten free baking powder
1/8 tsp nutmeg,
½ tsp salt and pepper
1 tbsp melted butter

Directions:
Grate fresh zucchini into a large bowl using the box side of your box grater. Then follow with grating the red onion. Stir in the eggs. Then add the gluten free flour a tablespoon at a time. The batter will be like pancake batter. Add the baking powder and the nutmeg, salt and pepper.

Heat a large sauté pan over medium heat with the tablespoon of butter. Drop heaping tablespoons of batter into the hot pan. Cook the pancakes for 2 minutes and then turn over on the other side until brown. Serve warm.

Makes 8-10 pancakes

**Do not peel the zucchini
