The thing I like about this meal is that it gets beans and vegetables into the kids indirectly. I also serve with a green salad. Lots of flavor. And there's usually some leftovers to pack for lunch, or reheat for a second meal.

2-3 pounds boneless/skinless chicken thighs
vegetable oil for frying
1/2 cup (generous) chunky salsa
1 can black beans, well rinsed
1 can kidney beans, well rinsed
1 can niblet corn, drained
1 tbsp cilantro
1 spring onion, sliced thinly

Brown chicken in oil on both sides. About 3 minutes per side. Mix together salsa, beans, corn, and place in crock pot. Place chicken on top of salsa mixture. Cover. Cook low for 8-9 hours. Chicken is done when juices run clear.

Serve on platter. Garnish with cilantro and sliced green onion. Goes well with salad, wraps, rice, shredded cheese, sour cream, avocado.
