Everyday Mussels
Delicious low-stress meal for anytime.
Everyday Mussels
1 tbsp olive oil
1 clove garlic, minced
1 tomato, finely chopped
2 pounds mussels, well scrubbed
1/2 cup white wine
fresh chopped parsley
fresh lemon wedges
* saute garlic in olive oil in large pot
* add tomatoes, saute 2-3 minutes
* add mussels (discard any that are not closed shut) and 1/2 cup wine
* cover and cook till mussels open, about 5 minutes
* discard any that do not open
* toss with parsley
* serve with lemon wedges, salad, bread.
