Eggplant Tapas Spread

1 medium eggplant
1 large onion (can sub green onions if you prefer)
1-2 cloves garlic
2 medium tomatoes
1/2 c olive oil
1 tsp salt
1 tbsp minced parsley
1. Bake eggplant in moderate oven (375 F)for 30-45 minutes.
2. Allow to cool.
3. Peel carefully and dice by hand
4. Peel onions, garlic, tomatoes and chop fine
5. Mix eggplant with chopped onion, garlic, tomato
6. Stir in olive oil, salt, parsley
7. Chill
