Eggplant Baba Ghanouj


Mediterranean Diet at it's tastiest! Makes 1 cup.

1 large eggplant
1.5 tbsp fresh squeezed lemon juice
1.5 tbsp olive oil
2 tbsp tahini paste
2 cloves crushed garlic
.5 tsp ground cumin
salt and pepper
1/4 cup parsley

Cut several slits into eggplant and grill or bbq for 15-20 minutes, until cooked and soft. Transfer to colander to drain and cool. Once cooled, peel, chop, and place in food processor with lemon juice, olive oil, tahini, garlic, cumin, salt, pepper, and parsley.

Keeps for 3 days in fridge. Serve with fresh vegetables and pita or naan bread.
