Easy Rice Pilaf

I love the versatility of rice. This is great with chicken.

Ingredients:
* 1 cup uncooked white rice
* 1 onion, chopped
* 1 knob of butter (a good spoonful)
* 2 cups veggie or chicken stock
* few shakes cinnamon and ginger (to taste)
* handful of nuts and/or dried fruit

Directions:

* Melt butter. Saute onion. Add rice and cook 2 minutes.
* Add stock. Bring to boil.
* Cover and simmer until liquid absorbed.
* Season with cinnamon and ginger to taste.
* Toss with nuts and/or fruit.
* Yummy nuts: almonds, peanuts, pecans, hazelnuts
* Yummy dried fruit: cranberries, raisins, mango, apricot
