Cucumber and Mint Salad

Cucumber and Mint Salad

Mint is really easy to grow in a pot or backyard. Mint is a good appetizer and promotes healthy digestion. Mint activates the saliva glands as well as glands which secrete digestive enzymes, aiding digestion.

2 cucumbers, field (peeled) or English
1 tsp salt
1 red onion, thinly sliced
1/3 cup sour cream or plain yogurt
1/4 cup fresh mint, chopped
3 tbsp fresh lemon juice
1 tbsp sugar
1 small clove garlic, minced

1. Slice cucumber thinly, or into long ribbons. Toss with salt and let sit in colander for a half hour. Rinse under cold water and drain.
2. Soak red onion in bowl of cold water for 30 minutes, drain.
3. In serving bowl, whisk together sour cream (or yogurt), mint, lemon juice, sugar and garlic. Add cucumbers and onion. Let flavors blend for 20 minutes before serving.

Goes well with roasted or barbecued meats.
