"Creative" Stove Top Stuffing Meatloaf

This recipe is amazing. We add all kinds of extras to it all the time, and it's always terrific. The recipe has been handed around and modified by all our friends and family.

Here's the basics of the recipe:

2 pounds lean ground meat (see notes below)
1 onion, chopped fine
1 cup liquid (water, broth, stock, or milk)
1-2 eggs
1 box stove-top stuffing mix (any flavour)
1/4 cup ketchup for the meat mixture
1/4 cup ketchup for the meat glaze

Basic instructions:

(1) mix everything except the 2nd amount of ketchup.
(2) shape meat mixture into an oblong loaf shape on foil or parchment-lined baking sheet
(3) cover meatloaf mixture with ketchup (like icing a cake)
(4) bake 350-375 degrees for 1 hour

Notes:
Here's where the fun begins! Get creative and healthy!

(1) for the meat, use lean ground beef, or turkey, or chicken, or a combination of beef, pork, and veal.
(2) for the liquid, follow your family's preferences and what you have on hand - milk, soy milk, oat milk, broth, stock, water, you could prob use fruit juice too.
(2) we received a starfrit hand-powered chopping gizmo as a Christmas gift, and so along with the onion we've added into the meatloaf any and all of the following:
** celery
** green onion
** apple
** red bell pepper
** green bell pepper
** mushrooms
(3) we add more seasonings to the meat mixture, such as:
** paprika
** turmeric
** dry mustard powder
** usually 1/2 tsp each, but add what your family likes!

We usually serve with roasted veggies, and cook them in the oven at the same time as the meatloaf.
