Cowboy Stew
Just the name of this dish makes me smile and de-stress. My sons and brothers have always had fun with this one on a weekend, especially for a sleep-over late night snack. Great with garlic toast and/or grilled cheese sandwiches on the side. Hope your "cowboys" enjoy it and create some memories over a bowl of this low-tech comfort meal.
1 pound beef stew meat
4 potatoes, cubed
1 onion, chopped
1/2 green pepper, chopped (can also use red)
2 cans baked beans (whatever kind you like)
1. Quietly smile at the name "cowboy stew"
2. Cut stew beef into smaller bite-size pieces
3. Combine everything into a slow cooker
4. Cook 8-9 hours
5. Serve with garlic toast
