Citrus Chicken

This is good cooked either on the grill or BBQ or in the oven.

3 pounds chicken pieces, as per your family's preference
1 tsp salt
water

(1) Parboil the chicken to reduce fat. Put chicken into large pot and cover with water and add salt. Bring to a boil and simmer 10-12 minutes. Take off the heat, and then drain the water.

(2) Meanwhile, prepare marinade, mixing together:
1/4 c orange juice
1/4 c lemon juice
1/4 c honey
2 tbsp olive or grapeseed oil
1 tbsp dijon mustard

(3) Pour marinade over parboiled chicken (use a plastic or glass container or bowl - do not use metal). Put chicken in marinade in fridge for 3-4 hours.

For oven cooking:
Bake in an open glass casserole, single layer, at 350-degrees for 40 minutes.

For grilling or BBQ:
Cook 20-30 minutes, turning pieces often, and brushing generously with marinade. Discard leftover marinade.
