Chocolate Sorbet

Depending on the chocolate you use, this is wheat and dairy free and vegetarian. Use organic oranges if you can, as the rind is included.

* 3 ounces dark or bittersweet or unsweetened chocolate
* 3 cups water
* 1 cup organic sugar
* 1/2 cup fresh squeezed orange juice
* 1/2 tsp grated orange rind (organic if available)
* 1/4 tsp pure vanilla extract

1. Heat water and sugar in a double boiler, or very heavy pan. Add chopped chocolate and simmer 15 minutes or until mixture is smooth. Cool.
2. To cooled mixture, add juice, rind, and vanilla.
3. If you have an ice-cream maker, follow those instructions.
4. If you don't have an ice-cream maker, then place in shallow pan and place that in the freezer.
5. When partially frozen, remove from freezer and whisk, then return to freezer.
6. When partially frozen again, whisk again.
7. When partially frozen again, whisk a third time.
8. When frozen, stir and serve.
