Carrot Cake Muffins

These are very moist.
1 1/2 cup flour
1/4 cup wheat germ or bran
1 tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup brown sugar
1/2 cup raisins
2 eggs
1/2 cup vegetable oil
1 cup grated carrot
2/3 cup crushed pineapple with juice
(1) combine dry ingredients
(2) combine wet ingredients
(3) combine wet and dry ingredients.
(4) stir only enough to mix (don't over stir)
(5) fill muffin pan 3/4 full
(6) Bake 25-30 minutes at 350-degrees
Makes 12 muffins
