Cabbage Chicken Salad

Salad Dressing:
1/4 cup olive or grapeseed oil
3 tbsp organic sugar
2 tbsp seasoned rice vinegar
1 tbsp soy sauce
1 tsp sesame oil (optional)

Salad:
3 cups cabbage, shredded (can use purchased coleslaw mix)
2 green onions, finely sliced
2 stalks celery, finely sliced
1/2 cup sliced almonds, toasted
1 cup snow pea pods, sliced
1 package ramen soup noodles, uncooked, broken into pieces
1 tin mandarin orange segments (optional)

(1) Mix salad dressing in medium-sized jar. Shake to combine well.
(2) Toss salad ingredients together in large bowl
(3) Add dressing, toss well. Serve immediately.
