Black Bean Tacos

Easy, tasty, and healthy.

4 soft tortillas (corn or wheat)
1 cup refried black beans
1 ripe avocado
1/2 red onion, finely chopped
1-2 tsp fresh lime juice
1 generous cup lettuce, shredded or torn
2 spring onions, finely sliced
1 tomato, sliced or chopped
salsa
sour cream (optional)

1. Mash the avocado (doesn't have to be smooth) with the minced red onion and lime juice. Taste.
2. Warm the tortillas in a clean damp tea towel on low heat in oven (place tea towel in glass casserole)
3. Warm beans on stove.
4. Assemble tortillas with fillings to your taste.
