This recipe is from a favourite site for gluten-free recipes, Elana's Pantry www.elanaspantry.com/beet-hummus. Elana has modified this recipe from one of her favourites, Elise at simplyrecipes.com
Beet Hummus
Ingredients:
* four medium sized beets, scrubbed, cooked and cubed
* one quarter cup raw tahini paste
* one quarter cup fresh lemon juice
* one small clove garlic, pressed
* one quarter teaspoon celtic sea salt
Directions:
1. Place all ingredients in a food processor and pulse until smooth
2. Serve with crackers (Elise suggests topping with goat cheese)
