Beet & Carrot Loaf

Ingredients
1 cup vegetable oil
3 eggs, divided
1 cup sugar
3 tbsp hot water
1 cup grated carrot
1 cup grated beets
1/2 cup walnuts
1 tsp vanilla
1/2 tsp salt
2 tsp baking powder
2 cups flour
1. preheat oven to 350-375
2. beat together oil, egg yolks (reserve whites) sugar, and hot water
3. stir in grated carrot and beets
4. stir in walnuts and vanilla
5. stir in salt, baking powder
6. stir in flour, 1/2 cup at a time
7. beat egg whites
8. fold in egg whites
9. bake for 30-40 minutes, till toothpick comes out clean
